They not always have to be sweet biscuits, sometimes we want to have savory preparations for breakfast or for a mid-morning or mid-afternoon snack, that's why we bring you this recipe that comes out very rich and is very nutritious. Also the cake, thanks to the quinoa, it is very fluffy.

INGREDIENTS

  • 100g dry red quinoa. (All varieties here)
  • 200ml of water for cooking
  • 2 eggs
  • 1 yeast envelope for cakes
  • 200g soy or milk drink
  • 100g whole spelled flour
  • 1 teaspoon of salt
  • 3-4 handfuls of walnuts (or the dried fruit that you like the most)

 

PREPARATION

 

  1. The first thing we will do is rinse the quinoa under the tap and then let it drain.
  2. In a pot, We add the quinoa and the water and put it over high heat until it starts to boil and then we lower it to low-medium heat and leave it to cook for approximately 20 minutes. To know that it is already cooked you can also look at the white ring that comes out around the grain, as in the photo.
  3. We drain the quinoa.
  4. In a blender we put the quinoa together with the rest of the ingredients, except for nuts or dried fruit chosen, and grind until obtaining a homogeneous dough.
  5. We add the walnuts in pieces, crushing them a little with his hands so that they break, and stir with a spatula.
  6. In a baking dish, pre-greased, We pour the dough and place in a preheated oven at 180º for approximately 40 minutes.
  7. To know that it is already done we can open the oven, very carefully so that the cake does not drop suddenly due to the change in temperature. The ideal is to open the door a little and leave it for a few seconds so that there is a temperature exchange and then we open completely to puncture the cake. If the stick or knife comes out dry, it is already, if you think that it is almost there but you are afraid that it will brown too much, You can remove it and put it with a kitchen towel on top so that it finishes being made inside.

Note: The source that we have used has been a rectangular one without much background so that a not very high cake would remain. If you use a smaller dish with more depth, take this into account for the baking time.
