Quiche flavored lentil coconut curry
Today we bring this quiche lentils with a mixture of flavors and spectacular coconut curry. You see that, despite how bombastic the name sounds, It is super easy to prepare and you will be 10 with your guests. Let's go to the mess!
We are going to separate this recipe into two parts. On the one hand the cooking of the lentils and on the other the quiche in itself.
1Part I
INGREDIENTS for cooking lentils
- 4-5 handfuls of lentils
- 200 mL of “milk” coconut
- 2 bay leaves
- 1 heaped spoon of curry powder
- 2 crushed garlic cloves
- Water
PREPARATION for cooking lentils
- In a pot, which you normally heap up, put the lentils and pour the water to cover or a little more.
- We add the rest of the ingredients in the pot and cook them as usual, but leaving them a little more time so that there are more passages (we use an express pot, high heat until the rings and then up to a minimum during 12-15 minutes).
As simple as that, and only up to here we would have a delicious spoon dish. But let's continue with the second part!
2Part I
INGREDIENTS for the quiche
- 1 Brisa dough base sheet.
- Lentils cooked in the 1st part and drained. (You can save the liquid and reserve it for a broth)
- 200 mL of soy cream.
- 100 mL of “milk” coconut.
- 1-2 spoons of curry powder.
- 4 medium eggs.
- 1 leek cut into thin slices. (Only the white part)
PREPARATION for the quiche
- Preheat oven to 180 degrees.
- We beat the eggs and mix them together with the cream, the “milk” coconut and curry powder until smooth.
- To the previous mixture we add the lentils and the leek and stir with a spoon.
- On the other hand, in a round mold of 28 cm in diameter, we put the dough sheet breeze.
- We pour the previously mixed content over the dough and baked!
- In the oven, a 180º, we will leave it between 20-25 minutes. This will depend on the oven of each one, but to know that it is made we will see that the dough is golden brown and the mixture has curdled well.
Once we take it out of the oven, the ideal is to wait for it to cool down well so that it does not fall apart when cutting.
