INGREDIENTS cold soup

  • 300g leek in pieces (the white part)
  • 3 Golden type apples, peeled and quartered.
  • 40g Extra Virgin Olive Oil (Äôve)
  • 20g butter (at room temperature)
  • 1L vegetable broth
  • 400g Judiones
  • 10 mint leaves

 

PREPARATION

  1. Once the leeks are cut into pieces, We put them in a food processor and grind for a few seconds.
  2. We add the apples, oil and butter and blend for a couple of minutes at maximum speed.
  3. In a casserole, We put the mixture that we have in the processor and sauté over medium-high heat for about 10-15 minutes, Stirring occasionally.
  4. Add the vegetable broth and cook for about 25-30 minutes over medium heat.
  5. We put what we have in the saucepan back in the processor and add the beans and mint. Blend well until we obtain a light and homogeneous soup.
  6. In this step we can reserve directly in the refrigerator for 2-3 hours or strain it to make a finer soup and also reserve in the refrigerator for one hour.
  7. After this time, It is ready to serve with a drizzle of EVOO on top and enjoy.
